Indian (home made starters) receipe

Hi All,

Well first post here and doing Slimming world for last few months and last wed got my first stone reward - yipeee.

Doing dinner for a friend later and I have made last night a SW indian chicken curry and was wondering does anyone have nice indian starter I could do too.

Well the curry I make I got from low fat cook book from a friend and you have to have to add 2.5 for the paste but it serves a lot so - I have made it with chicken or lamb and its soo soo tasty.
I don't have receipe with me but this is from memory (I have made it lots of times) In recipe it would have olive oil but I change to fry light since joining SW.

5 chicken breasts
2 onions
2 peppers (any colour)
tbsp of ginger (fresh)
3/4 gloves of garlic - chopped up
1 tsp cumin seeds
1 tbsp Ground corriander
1 tbsp cumin
1 tbsp of chilli powder
1 tbsp of curry paste (I use Pataks Jalfrizi)
2 tins of tomotoes
Fresh corriander to garnish - (I only use if I have it)
Fry light

Spray fry light in pan and add onion and cumin seeds and fry for 2 mins
Add in your chopped peppers, ginger, garlic and fry for 2 mins
Add in your curry paste, ground corriander, cumin, chilli powder and stir together
Add your chicken fillets and fry for 5 mins
add your 2 tins of tomotoes and let it all simmers together.

I know it looks a lot of ingredients but it really is easy and it is really good curry.

Give it a go next week. Have a read through Petes recipes, his peanut curry is a firm favourite if mine x
