Red Days inspiration for red day lunches

Hi there! The question of lunches comes up regularly at least once a week so if you do a search (click on the 'search this forum' button further up the main page) you'll find loads of ideas. Enough to keep you going for ages :D
 
My favourite red day meal is a creation by my boyfriend that we call chilli chicken. You get a sheet of tin foil and wrap chicken breasts, onions, peppers, garlic and chilli or chilli flakes and lots of soy sauce in it like a parcel. You then whack it in the oven and the veggies and chicken steam in the soy sauce. This is completely free on red days or you can put it with noodles or rice as healthy extras but a plate full really is enough on its own in my opinion. It's so simple and quick to make. Takes bout 30-40mins to cook then in the oven at 200C. Just check it after 30mins to see how the chicken is doing.
