Made Thai Green Curry, 8pp per portion.

350g of turkey breast
70g of Blue Dragon thai green curry paste
Appropriate veg (i used mushrooms, onions, spinach and yellow pepper)
1 can of coconut milk (you could use light for less pp)

Cut onions smallish and add to pan already sprayed with frylight or similar.
After about 30 seconds add the thai paste and coat onions in it.
Add turkey chopping up into pieces, leave for about 3 minutes, stirring occasionally.
Add veg and leave for about another 3-5 minutes, stirring occasionally.
Add coconut milk (remember to shake it!!) and stir and leave for about 20 minutes, or until the sauce has thickened a bit (i find that it also sort of settles after you've left it for a few minutes when turned off)

I served this with cauliflower rice so the whole meal was only 8pp!
 
Lasagne

This is what i'm planning to make tonight. 10pp I think! Makes 4 portions.

250g of lean mince,
mushrooms,
onions,
yellow pepper,
1/2 ragu white lasagne sauce (i usually attempt to make my own, but i have this in the house)
1 oxo italian cube,
1 tin of chopped tomatos,
1/2 a carton of passata,
Lasagne sheets 200g


Put onions into hot pan already sprayed with frylight,
Add mince and leave to brown for a few minutes.
Drain off excess liquid from meat and onions and put back in pan.
Add mushrooms and yellow pepper, leave to warm through for 45 secondsish.
Add tinned tomatos, passata and oxo cube.
Cook for about 10 minutes.
Whilst doing all this have a pan of hot water to drop a lasagne sheet in at a time. I often find if i put them in dried it just doesn't taste as good or cook as well.

Layer up the lasagne however you like, adding the ragu sauce at intervals, put in oven for about 30 minutes.

I havnt put cheese because I don't have any haha.
