Made Thai Green Curry, 8pp per portion.
350g of turkey breast
70g of Blue Dragon thai green curry paste
Appropriate veg (i used mushrooms, onions, spinach and yellow pepper)
1 can of coconut milk (you could use light for less pp)
Cut onions smallish and add to pan already sprayed with frylight or similar.
After about 30 seconds add the thai paste and coat onions in it.
Add turkey chopping up into pieces, leave for about 3 minutes, stirring occasionally.
Add veg and leave for about another 3-5 minutes, stirring occasionally.
Add coconut milk (remember to shake it!!) and stir and leave for about 20 minutes, or until the sauce has thickened a bit (i find that it also sort of settles after you've left it for a few minutes when turned off)
I served this with cauliflower rice so the whole meal was only 8pp!
