I would add a couple of beaten eggs and make it into a rice quiche.... yummy, just mix beaten eggs with cooked rice and bake in the oven until golden brown ideal for snacking on throughout the day as its syn free on Green.
Yes you can as long as you put it in the fridge once its cooled & then heat it in the micro until its piping hot ......then throw any left overs (dont reheat twice). If you dont the rice could grow bacillus cereus & give you a nasty bout of food poisoning!
