Low carb sauce thickeners?

My low carb recipe repertoire would increase tremendously if I could find something to substitute for the flour in sauces to thicken them. I have a lot of recipes using white and cheese sauce and the other ingredients would be fine - butter, cheese and watered down double cream instead of milk.

Any ideas for a thickening agent?
 
My recipe for cheese sauce - 50ml double cream & 30g grated extra mature cheddar in a pan with pepper to taste (could add a little mustard if you fancy), warm until the cheese has melted then add half an egg yolk & whisk constantly over a low heat. The egg yolk thickens the sauce :)
