Carrot salad
Kiwi coleslaw (balsamic dressing)
Traditional coleslaw

Traditional coleslaw
For the coleslaw I use red and green cabbage, carrots and onion. All grated or thinly sliced. I used a mix of natural yoghurt, extra light salad cream and extra light Mayo. Add salt, pepper and a teaspoon of sugar.

I've been making scotch eggs again and hav found a much less messy way of doing them.

Have also added some l/f sliced cheese which gives them a nice flavour.

Pictures are in the wrong order (woops)

Hi Mama,

I absolutely love your thread, all of your meals look delicious!

I hop you don't mind me asking but...I have my veggie sister coming next weekend who absolutely loves caribbean food. Can you recommend any SW friendly veggie Caribbean delights?

I've looked back through your thread but I can't fine recipe for scotch eggs, do you coat them in anything and is it mince or sausage meat?

Also how do you do your traditional coleslaw please?

I didn't post scotch egg recipe because I think it's already a stickie in the recipie section. have a search...

Basically you use sausagemeat. Pick your fave low syn or syn free sausages and remove from skins. My pictures should tell you the otter steps. I either don't coat then or I coat them in cornflour. Some people use breadcrumbs.

If she likes soup I would try my Saturday soup without the chicken (page 1 or 2). It's very filling and flavoursome. If you make it without meat the jamaicans would call it 'Ital soup'.
Use veg stock. I wld use the strong concentrated stuff.

Thanks mama! She is a proper veggie so it can be difficult but I'm sure this will go down a trick.

And after she's gone I'm going to try the fried chicken!
