Made this for lunch's and OMG so so yummy, definately recommend and so easy to prep and made :D

Microwave Butternut Squash Risotto
Serves 3
2 Syns Ingredients
250g Risotto Rice
700ml Vegetable Stock
Medium Butternut Squash
28g Parmesan Cheese
Handful of Sage Leaves

Place rice in a microwave bowl and add 500ml of stock, cover with clingfilm and cook on high for 5 mins.Meanwhile peel and cut squash into medium chunks. Stir the rice, then add the squash and the rest of thestock. Recover with clingfilma dn cook on high for further 15 mins, stirring halfway through until almostall of the stock is absorbed and the rice and squash are tender.Leave to sit for 2 mins, then stir in parmesan and sage.

Use whatever you fancy or even leave it out as proper risotto should be creamy enough not to need any cheese.
