Mini Yorkshires with Beef & Horseradish

Ingredients
50g plain white flour
1 large egg
2-3 tbsp semi-skimmed milk
1 x 200g rump steak
2 tsp horseradish sauce
2 tsp low-fat yogurt
Oil spray
Watercress to garnish

Instructions
1. Preheat the oven to 200C, 400F, Gas Mark 6.
2. Whisk together the batter ingredients to the consistency of double cream. Lightly spray a 12-hole bun tin with oil spray and pop it in the oven for 5 minutes to heat.
3. Remove the tray from the oven and pour the batter equally in to each hole. Return the tray to the oven for 10-15 minutes until golden brown.
4. Meanwhile, cook the steak on a griddle pan for 5-6 minutes. Mix together the horseradish and yogurt and put a blob in each pudding. Slice the beef into squares and place in the puddings with more sauce and a watercress leaf. Serve as a starter.
