Sweet Potato & Onion Fritters
3 Onions (half and slice length ways)
1 egg whisked
1 large sweet potato (grated or I used my mini chopper)
1 tsp of ground coriander
1 tsp of cumin
1 tsp of garam masala
Frylight (I always use sunflower for this)-you need quite a bit so I always count these as 2 syns

Mix together in a big bowl and form golf sized balls which I then pat down with my palm.
Spray cooking oil (quite a bit) on the baking tray
Place the fritters onto the baking tray and spray with frylight
Bake in over at 180 for 15 minutes, take out and turn over with a spatula and spray more fry light and pop back in for a further 15 minutes.
You can put these under the grill for five minutes afterwards if you like them crispy and I serve this with a mint yogurt dip! Yummy!

To make the Syn free mint dip just mix 3 Cups of Fat Free Greek Yogurt, 1 tbsp of Colmans mint sauce and I tsp of artificial sweetener together! Also lovely in salads!

Pickled Cucumber (Syn Free)
One large cucumber
One deseeded red chili (optional)
One red onion chopped (optional)
1 & 1.2 cups of White Vinegar
3 tsp of sweetner
1/4 tsp of salt

Slice cucumber up as thin as possible and place in bowl along with the red onion
Sprinkle with sweetener and salt toss well
Leave covered with tea towel for 30 minutes to let the water rise to the top.
Mix in vinegar and chopped red chili and ready to go!

Tip-Delicious served as a chutney with cheese!

Carrot & Corriander Soup (Syn free)
2 Onions (Chopped)
500g of carrots (peeled and chopped)
1 litre of Vegetable or chicken stock
1 tbsp of ground coriander
1 tsp of fresh coriander (optional-garnish)

Chuck it all in a big pot, boil on high heat for 5 minutes and then turn down the heat and simmer for a further 25 (until vegetables are nice and soft)
Blitz in a blender or with a handheld
Sprinkle on some fresh coriander and enjoy!
 
Cauliflower or Broccoli Cheese (Syn free-Optional)
1/2 a head of cauliflower or large Broccoli (or both!!! :p)
1 and 1/2 cups of fat free cottage cheese (this is SO disgusting in anything else!)
1 egg
1 tbsp of low fat grated cheese (Optional-if you use remember to syn)

Chop Veg of choice into florets and boil until tender
Whisk Egg into cottage cheese until mixture becomes smooth
Put veg of choice into oven proof dish and pour mixture over
Sprinkle low fat grated cheese over mixture and bake in over for around 30 minutes!

TIP-I serve this over Gammon to get a slimming world friendly complete meal! Also this cheese sauce can be used on it's lonesome as a pasta sauce if you just put on stove to make sure the egg cooks through!

Basil Tomato and Balsamic Pepper Soup (Syn Free)
3 bell peppers
1 onion
2 cloves of garlic
Frylight (I use the Olive oil one for this recipe)
1 can of chopped Italian tomatoes
1 and 1/2 tsps Dried Basil
I litre of Veg stock
25oml of water
Balsamic Vinegar

Deseed peppers and chop along with onion and minced garlic
Frylight up onions, peppers and garlic until tender add a splash of balsamic vinegar and toss up cooked vegetables
Add in chopped tomatoes, stock, water and basil, simmer for 30 minutes on a low heat (stir every 10 mins)
Blitz with blender! Enjoy!

Spicy Korean Green Beans with Pork (Syn Free)
1 Red chili deseeded and chopped (can use a pinch of dried chili flakes instead)
500g of lean Pork Mince
2 tbsp of dark soy sauce
Frylight (I use the sunflower one for this recipe)
1 pack of washed and trimmed green beans

Boil green beans until tender and drain and set aside
Frylight up Pork mince until cooked and add in soy sauce and chopped chili, stir-fry all together for approx 5 mins and then toss through green beans until they are heated up.
 
Tomato, Caper & Spinach Pasta (Syn Free)
1 can of chopped tomatoes
1 tbsp of tomato puree
1 jar of capers (drained)
200g of fresh spinach
1 onion (chopped)
250g of dried pasta
Frylight

Boil pasta as per pack instructions
Fry onion until tender and add in spinach gradually until it's all wilted down
In a pot pour in tinned tomatoes, add in capers and tomato puree into big pot and add in cooked onion and spinach
Simmer sauce on medium heat for 10-15 minutes
Toss cooked pasta into put and mix until evenly covered

Tip-Can serve sauce without pasta over Roasted Peppers!

Five Spice Gammon! (Syn Free)
1 Tsp Chinese 5 spice
50ml of Chicken or Veg stock
2 Gammon Steaks (fat trimmed off)
2 tbsp of soy sauce
Frylight (I use the sunflower one for this)

Cut Gammon Steak into bite size pieces, coat in 5 spice, frylight up pieces until cook until edges start to brown and then add in soy sauce and stock and continue to cook until stock reduces and sauce becomes thick. Remove gammon from pan and serve with sauce poured over.

Tip-Add in dried chili flakes to give it an extra kick!
 
Butternut Squash & Nutmeg Soup (Syn Free)
1 Butternut Squash (peeled, deseeded and chopped)
1 onion (chopped)
1 litre of chicken stock
2 tsps of nutmeg
Frylight (I use the butter one for this)

Fry up onion until soft, add in butternut squash and stock, simmer until butternut squash has softened (this happens very quickly-about 15 mins).
Pop into blender and blitz until smooth, stir through nutmeg and season as desired.
