Mushroom Soup

Get about 6 biggish mushrooms, put in saucepan.
Put in two crushed Oxo veg stock cubes into saucepan.
Pour boiling water over.

Added in salt and pepper with a few herbs (season to taste) and 25 mins later, blend and end result is fab soup!!!

I put half a chopped onion in a pan, chopped 6 chestnut mushrooms with a few squirts of fry light to cook lightly first then added 500ml chicken stock (cube) and after about 5 mins half bag of spinach. Few mins later lifted out the veg and blitzed with hand blender then added back to pan. Makes 2 generous servings :)
