I made a really nice veg curry with low fat yoghurt the other weekend! I cooked butternut squash, spinach and broccoli in a pan with cumin, garam masala, a bit of curry powder, and other spices I can't remember haha. And I let it simmer and reduce down then stirred in some low fat yoghurt to make it nice and creamy :) it was lush!
