I eat quinoa quite a lot. I use it in the same way I use cous cous. It is nice mixed with loads of rasted veg and chopped up bacon. Or if I am making a tomato soup i put some in there as it makes it more filling.

As for salads... you could do lettuce leaves, mange tout, spring onions, cucumber and feta cheese (HEA). Just mix up everything you like with a bit of fat free dressing and you are bound to be happy.
I also make croutons with 2 slices of a 400g loaf of wholemeal (HEB) sprayed with frylight and rubbed with garlic to add some crunch. Or use seeds for a change!
