Hey all,

Just having a peep and I found these recipes, maybe some repeats but some im not familier with. Have a look, hope you find something you like x :vibes:
Easter Cake
Serves 8
4½ sins per 1/8
Ingredients
5 large eggs
42 caster sugar
8 tbsp granulated artificial sweetener
85g plain flour
28g coca powder
284g very low fat fromage frais
5 tbsp Quark
2 sachets Turkish Delight Options
½ tsp cocoa powder
8 Cadbury’s mini eggs
Method
Preheat oven to 190c/375F/Gas Mark 5
Grease and line an 8in spring clip cake tin with greaseproof paper
Whisk the eggs, sugar and sweetener until pale; thick and creamy, this will take about 6 – 7 minutes
Sift in the flour and cocoa and fold in carefully using a metal spoon until well combined
Pour mixture into the cake tin and smooth over the top
Bake for 20 – 25 minutes until risen
Allow to cool in the tin. The cake will shrink on cooling, then remove from tin and peel away the paper
Slice cake in half horizontally
Mix the fromage frais, Quark and Options until thick
Spoon 1/3 of the fromage frais mix onto the bottom half of the cake
Place other layer of cake on top and press down gently
Spoon 1/3 of the fromage frais mix over the cake and cover the top
Place the remaining mixture in a piping bag and pipe either rosettes around the rim of the cake
Place a mini egg on each rosette
Dust with cocoa powder and serve



Chinese Chicken
Free on red – For green use chicken as healthy extra
Ingredients
Chicken fillets
Soy Sauce
Stir-Fry vegetables
Frylight
Method
Stir-fry chicken fillets in soy sauce until almost cooked
Add stir-fry vegetables and continue to cook until vegetables are tender and chicken is cooked through
If using the chicken as a healthy extra on a green day service with rice, or if on a red day- just have the vegetables or use a jacket potato as a Healthy Extra.

Stuffed Pepper
Free on either day
Serves 1
Ingredients
1 pepper (any colour you like)
1 small onion
2 mushrooms
Quark
Optional – grated cheddar (Healthy extra)
Method
Take on pepper and slice it in half vertically. Remove all the seed sand the green stalk
Next mix some Quark in a bowl with small chunks of onions and mushroom
Place cheese and onion mixture into each half of the pepper and place on a baking tray
Cover with foil and bake for 20 – 25 minutes on 180c
If you wish you could sprinkle some grated cheese over the peppers after cooking, place back into over for a few minutes until it has melted.
Serve immediately.



Onion Gravy
1.5 sins on either day
Ingredients
Bovril or vegan stock
1 medium onion
frylight
1 tsp corn flour (1.5 sins)
Method
First slice the onion and put into a saucepan
Fry the onion in frylight until soft
Make the stock according to the instructions on the jar for 1 pint (I tend to use a little more than they say to get a slightly thicker gravy). Add stock to the onions.
If your gravy is a bit thin, mix the corn flour into a smooth paste with a little water and stir into the pan, keep stirring until gravy comes to the boil and thickens.



Mushroom Soup
Free on either day
Serves 4
Ingredients
1 lb Mushrooms
1 ½ pints vecon stock
1 large onion
garlic and black pepper to taste
Quark
Method
Place all the ingredients in a large saucepan and bring to the boil
Cook together for 15 – 20 mins
Place in a blender and puree
Stir in a bit of quark and serve



Black Forest Dessert
2 sins on either day for whole dish
Serves (depends if you want to share!!!!)
Ingredients
½ packet of Shearways frozen black forest fruits
Blackcurrant sugar free jelly – 2 sins
Carton of chocolate Muller light
Place the fruit in a large dish
Make up the jelly to about 2/3 of a pint
Leave to cool
When cooled lightly whisk in the yoghurt
Pour over the fruit and refrigerate until set



Banana & Toffee Mousse
Sin free on either day
1 Muller light toffee yoghurt
1 Muller light banana yoghurt
2 tbsp low fat fromage frais
4 egg whites
4 tbsp artificial sweetener
4 sheet leaf gelatine
Method
Beat egg whites and sweetener until stiff
In a separate bowl whisk toffee yoghurt with 1 tbsp of fromage frais
Repeat this with the banana yoghurt
Dissolve leaf gelatine in a small amount of hot water, split into half and whisk half into each yoghurt mix
Fold half the egg whites into one yoghurt mix and half into the other
Layer in dishes and leave to set in fridge
Serve with slices of fresh banana



Vegetable White Sauce
2 ½ sins on either day
Ingredients
250 ml semi skimmed milk (healthy extra)
1 courgette
mushrooms
1 onion
2 crushed garlic cloves
½ ounce of cornflour
Method
Put 250ml semi skimmed milk from healthy extras into a saucepan
Chop into small pieces the courgette, mushrooms and onion
Place all the vegetables in the pan with the milk and add the garlic
Bring to the boil
Mix half an ounce of cornflour with some cold water
Add the cornflour to the milk and vegetables
Out over the pasta of your choice.



Quorn Pasta Sauce
Free on either day
Ingredients
Large Onion
1 red pepper
1 green pepper
garlic to your taste
jar/box passatta
1 spoon of marmite
tsp of basil
paprika
300g bag of frozen quorn mince
mushrooms
Method
Put a little oil I a pan, heat it and cook the quorn for a few minutes and then keep to one side
In another pan, fry the onion and garlic until the onion has softened
Add peppers and cook for a few minutes
Add the quorn mince and the passatta bring to boil then turn down and let simmer
Add spices, herbs and marmite, stir till it dissolves
After 10 mins add mushrooms
Serve with pasta, rice or in a baked potato


Coleslaw
Free on both days
Ingredients
Shredded carrot and cabbage
1 egg yolk
2 tbsp white wine vinegar
Artificial sweetener
salt and pepper
low fat fromage frais
Method
Mix together the egg yolk, white wine vinegar, arterial sweetener, low fat fromage frais and salt & pepper
Add the mixture the shredded carrot and cabbage
If pregnant do not eat raw eggs



Mushroom baskets
Free on either day
Serves 10
Ingredients
10 slices of white nimble bread
3oz/85g mushrooms
frylight
2 tbsp brandy
3 tbsp freshly chopped parsley
salt and pepper
Method
Heat over to 200c/gas mark 6
Remove the crusts from the bread and press the slices into the moulds of baby muffin tins
Bake for 10 minutes until crisp
Slice the mushrooms and fry in fry light until soft
Add the Brandy, parsley and seasoning
Fill the baskets with mixture and serve hot



Iced Raspberry Mousse
2 ½ sins serving on either day
Serves 4
Ingredients
2 x 250g tubs Quark
50g icing sugar (10 sins)
Lemon juice to taste
250g pack frozen raspberries
Place quark and sugar into large bowl
Squeeze in a few drops of lemon juice and beat with wooden spoon until smooth and creamy
Gently stir in raspberries until they begin to break up and mixture is streaked pink
Taste and add more lemon juice if liked
Spoon into glasses and serve


Perfect Peach Pudding
Serves 2
5 sins for whole recipe on either day
Ingredients
1 pkt diet peach jelly
¾ cup boiling water
1 tin of diet peaches
1 cup of low fat yoghurt
Dissolve the jelly in the boiling water and set aside to cool but not set
Once cooled add the drained peaches and the yoghurt
Stir well and set into two individual containers in the fridge
Change the flavour by changing the fruit and jelly flavour



Malteser Ice Cream
5 sins for whole recipe on either day
Ingredients
Large tub of low fat fromage frais
2 pots of toffee flavour Muller light
fun size bar of Maltesers
Method
Mix together a large tub of fat free fromage frais 2 tubs of toffee Muller light
Crush a 21.5g (fun size) bar of Maltesers and mix into the toffee mixture
Put in a plastic box type thing and place into the freezer
Stir every 20 mins until frozen


Banoffee pie
4 sins per serving on either plan
Serves 8
10- low fat butter crisp biscuits
3 bananas
2 tbsp lemon juice
2 tbsp arterial sweetener
1 sachet toffee flavoured Options drink
450g Quark
1 tbsp powdered gelatine
1 large egg white
28g plan chocolate
Grease and line 8in/20.5cm spring clip cake tin with baking parchment
Crush the biscuits
Scatter biscuits evenly over the vase of the tin
Peel 2 bananas and mash with the lemon juice
Place in a bowl and stir in the sweetener, toffee drink and Quark
Pour 3 tbsp boiling water over the gelatine and stir until dissolved
Whisk egg white until set and add to the banana mixture
Add gelatine and gently fold the mixture together until well blended
Pile on top of the crushed biscuits, smooth top over and chill for 2 hours until set
Peel and slice remaining banana and arrange on top of pie.
Grate over the chocolate and serve.


Strawberry Mousse
2 sins whole recipe
Ingredients
1 strawberry sugar free jelly
¾ pint hot water
200g tub strawberry Muller light
300g virtually fat free fromage frais
4 egg whites
Make the jelly with the hot water. Put aside to cool, do not allow to set completely.
When the jelly has cooled whisk the egg whites until stiff
Mix together the Muller light and fromage frais
Whisk the jelly into the Muller light mixture
Whist in the egg whites
Pour into serving bowl and place in fridge until set



Sweet and Sour Chicken
Free on red, for green use chicken as healthy extra
Serves 2
Ingredients
Chicken (amount depends on colour of day)
Fry light
300ml passatta
3 tbsp granulated sweetener
2 tbsp orange cordial
1 tbsp Worcester sauce
1 medium onion
Chinese stir-fry vegetables
Method
In one pan spray with fry light and fry chicken until cooked through
Meanwhile take another pan, add the onion (diced) and fry until soft
Add the Chinese vegetables and cook for 5 mins.
Add the passatta, sweetener, cordial and Worcester sauce and cook gently for 5 minutes
Add the chicken to the sauce and heat gently for a few minutes
If on a green day serve with rice, on a red serve with a jacket potato (healthy extra)
You could add some fresh pineapple chunks to the sauce!


Berry Layer
Serves 1
4 ½ sins per serving in either day
Ingredients
Frozen raspberry and blueberry medley (or any frozen berry mix)
Small pot of very low fat fromage frais
1 Muller light country berries
1 meringue nest
4 tablespoons aerosol cream
Method
Crush the meringue into medium sized chunks
Mix the fromage frais and the Muller light
Layer the fruit, fromage frais mix and crushed meringue in a tall glass or sundae dish, finishing with the fromage frais mix
Top with the aerosol cream and decorate with raspberries



Turkish Delight
Serves 1
4 sins for whole dish
Ingredients
1 strawberry Muller light yoghurt
2 sachets Turkey Delight Options
2 ½ tsps gelatine powder
2 tbsp very hot water
Method
Dissolve the gelatine in 2 tbsp hot water in a cup
Place cup in a pan of boiling water and stir until it is all dissolved
Put 1 ½ sachets of the options in to the yoghurt and mix well til it is all brown and smooth
Add the gelatine a spoonful at a time and mix well
Pour into a shallow container sprinkle with the remaining option powder



Mince Pies
Makes 10
2 sins each
Ingredients
2 x 28g sheet filo pastry
6 tablespoons mincemeat
1 beaten egg
Method
Spray a pie/baking tray with fry light
Cut each sheet of filo pastry into 10 pieces, making 20 pieces altogether
Brush each piece of pastry with beaten egg
For each pie, place a piece of filo pastry onto the tray; place a second sheet at an angle to the first. Scrunch up the sides to form a case
Place ½ tbsp of mincemeat into the pie
Bake in a preheated over at 200c for 7 – 10 minutes, until the pastry is golden and crisp



Fake Parkin Cake
4 sins
Ingredients
28g porridge oats (healthy extra)
4 Scan Bran
1 tbsp dark treacle
15g powdered artificial sweetener
2 beaten eggs
1 tsp cinnamon
Method
Break scan bran into small pieces then sprinkle on hot water
Leave a few minutes then break up with a fork, until scan bran resembles breadcrumbs
Stir in the porridge oats, treacle, cinnamon and sweetener
Mix in the beaten egg and stir well
Line a loaf tin with foil and spray with fry light
Bake for 25 – 30 minutes in a pre-heated oven at 190c or place in a microwavable container and microwave on high for 5 minutes



Fake Christmas Pudding
Serves 6
3 ½ sins per serving
Ingredients
2 weetabix
scan bran
2 tbsp mincemeat
3 tbsp golden syrup
1 – 2 eggs, beaten
1 tsp brandy essence
1 tsp ginger
1 tsp cinnamon
2 – 3 tsp mixed spice
28g powdered artificial sweetener
Method
Break scan bran into small pieces then sprinkle on hot water
Leave a few minutes then break up with a fork until scan bran resembles breadcrumbs
Crumble in the Weetabix, stir in the mincemeat, syrup, brandy essence, spices and sweetener
Mix in the beaten egg and stir well
Place in microwavable pudding bowl and microwave on high for 10 – 12 minutes until firm


Chocolate Bran Cake
6 ½ sins on either day
Ingredients
5 scan bran (healthy extra)
28g coca powder
1 level tbsp golden syrup
15g powdered artificial sweetener
2 eggs, beaten
Break scan bran into small pieces then sprinkle on hot water
Leave a few minutes then break up with a fork, until scan bran resembles breadcrumbs
Stir in the cocoa powder, syrup and sweetener
Mix in the beaten egg and stir well
Line a loaf tin with foil and spray with fry light. Bake for 25 – 30 minutes in a pre-heated over at 190c or place in a microwavable container and microwave on high for 5 minutes



Marmalade Scan Bran Cake
3 sins for entire dish
Ingredients
1 Weetabix
4 scan bran (healthy extra)
1 level tbsp marmalade
½ tsp mixed spice (adjust according to taste)
½ tsp cinnamon (adjust according to taste)
1 level tbsp honey
15g powdered artificial sweetener
2 eggs, beaten
Break scan bran into small pieces then sprinkle on hot water
Leave a few minutes then break up with a fork, until scan bran resembles breadcrumbs
Crumble in the Weetabix, stir in the marmalade, spices, honey and sweetener
Mix in the beaten egg and stir well
Line a loaf tin with foil and spray with fry light. Bake for 25 – 30 minutes in a pre-heated oven at 190c or place in a microwavable container and microwave on high for 5 minutes


Ginger Bran Cake

Ingredients
1 Weetabix
4 scan bran (healthy extra)
4 level tsp Asda ginger preserve
1 tsp ginger
1 level tbsp honey
15g powdered artificial sweetener
2 eggs, beaten
Method
Break scan bran into small pieces then sprinkle on hot water
Leave a few minutes then break up with a fork, until scan bran resembles breadcrumbs
Crumble on the Weetabix, stir in the ginger preserve, ginger honey and sweetener
Mix in the beaten egg and stir well
Line a loaf tin with foil and spray with fry light. Bake for 25 – 30 minutes in a pre-heated oven at 190c or place in a microwavable container and microwave on high for 5 minutes



Scan Bran Carrot Cake
5 ½ sins
Ingredients
1 weetabix
4 scan bran (healthy extra)
5oz grated carrot
½ tsp mixed spice
1 tsp cinnamon
1 tsp nutmeg
2 tbsp runny honey
3 eggs, beaten
Method
Break scan bran into small pieces then sprinkle on hot water
Leave a few minutes then break up with a fork, until scan bran resembles breadcrumbs
Crumble in the Weetabix, stir in the honey, mincemeat, carrots and spices
Mix in the beaten egg and stir well
Line a loaf tin with foil and spray with fry light. Bake for 25 – 30 minutes in a pre-heated medium oven at 190c or place in a microwavable container and microwave on high for 5 minutes



Scan Bran Sticky Toffee Buns
4 ½ sins
Ingredients
5 scan bran
1 sachet toffee options drink
1 tbsp golden syrup
1 egg
Soften scan bran with hot water, leave to swell for better results
Mix all ingredients together with beaten egg
Bake in a moderate oven on non-stick bun/muffin trays
Makes either 12 buns in 15 minutes or 6 muffins in 20 minutes
Scan Bran Rhubarb Crumble
1 healthy b selection and 1 sin OR 2 healthy b selections
Ingredients
454g rhubarb stewed
5 scan bran
brown golden sweetener
Method
Soften 5 scan bran with hot water and leave to swell
Mix together with Brown gold sweetener
Sprinkle the scan bran mixture over 454g of rhubarb stewed to taste



Spiced Apple Cake
Serves 8
5 sins per serving
Ingredients
3 eating apples
2 tbsp lemon juice
finely zested rind of a 1 lemon
3 large eggs, separated
57g caster sugar
113g self raising flour
2 tsp ground cinnamon
2 level tsp reduced sugar apricot jam

Chicken Kiev
Serves 5
2 ½ sins per serving on red
Ingredients:
5 boneless, skinless chicken breasts
salt and freshly ground black pepper
2 garlic cloves
2 ½ tbsp low fat fromage frais
1 tbsp chopped parsley
2 ½ level tbsp and 2 ½ level tsp grated Parmesan cheese
1 small egg, beaten
35g golden breadcrumbs
Fry light
Method:
Preheat the oven to 190c
Using a small sharp knife, slice lengthwise down the side of each chicken breast taking care not to server the flesh completely, to form a pocket and season the cavity
Peel and crush the garlic cloves and mix with the fromage frais, parsley and 2 ½ tbsp of Parmesan cheese
Spoon the mixture into each cavity and press together gently to seal, secure the cavity by skewering with a cocktail stick and place the chicken breasts on a sheet of baking parchment
Brush the bottom side of each chicken breast with beaten egg and sprinkle lightly with half of the breadcrumbs
Turn over and repeat with more egg and the remaining breadcrumbs
Sprinkle the top of each lightly with the remaining Parmesan
Transfer to a baking sheet and spray with 10 applications of fry light
Bake for 25 – 30 minutes until lightly golden and cooked through


Moussaka
Serves 4
Sin Free on red
Ingredients:
450g lean lambs mince
1 garlic clove, chopped
1 onion, chopped
400g can chopped tomatoes
200g mushrooms chopped
¼ tsp allspice
¼ tsp cinnamon
salt and freshly ground black pepper
2 large aubergines
2 eggs
140 very low fat natural yoghurt
140 very low fat cottage cheese
¼ tsp nutmeg
Method:
Dry fry the lamb in a non-stick pan until brown, drain any excess fat and return to the pan
Add the garlic, onion, tomatoes, mushrooms, allspice, cinnamon and seasoning and simmer for 15 minutes
Thickly slice the aubergines, place in a large saucepan, cover with boiling salted water and simmer for 5 minutes until soft. Drain and set aside.
In a large dish, place the minced lamb mixture and aubergines in layers, starting with the minced lamb and ending with the aubergines
Beat the eggs, add the yoghurt, cottage cheese and nutmeg and mix
Pour the mixture over the top layer of aubergines and bake in the centre of the oven for 35 – 40 minutes on gas mark 5/190c until golden


Steak and Mushroom Pie
Serves 4
4 sins per serving on red
Ingredients:
1 medium onion
685g lean cubed braising steak
1 level tbsp corn flour
2 bay leaves
salt and pepper
285ml beef stock
230g closed cup mushrooms
2 x 25g sheets of filo pastry
1 medium egg, beaten
Method:
Peel and slice onion and place in a pan
Remove all visible fat from the steak, toss in the corn flour and add to the pan with the bay leaves and seasoning
Add the stock and about 150ml water to cover the beef
Bring to the boil, cover and simmer for 1 ½ hours until the beef is tender
Cool, and then discard the bay leaves
Preheat the oven to 220c
Quarter the mushrooms and place in a 2 pint pie dish
Add the beef and onions using a slotted spoon and pour over about 200ml of the cooking liquid to come half way up to the dish
Brush each sheet of filo pastry with the egg, lightly scrunch up and place on top of the meat, pulling the sheets to ensure all the meat is covered
Brush generously with egg and bake for 20 minutes. Lower the heat to 180c and continue cooking for a further 20 minutes until golden and hot


Pineapple Topped Glazed Gammon
Serves 4
3 ½ sins per serving on red
Ingredients:
Fry light
4 unsmoked gammon steaks, all visible fat removed
4 slices fresh pineapple
4 level tbsp clear honey
4 tbsp freshly chopped parsley
4 level tsp wholegrain mustard
Method:
Heat a griddle pan sprayed with fry light
Add the gammon and cook for 2 minutes on each side, or until cooked to your liking
Meanwhile, remove the skin from the pineapple slices and add to the pan for the final few minutes of cooking turning once until lightly coloured on both sides and slightly softened.
Mix together the honey, parsley and mustard and pour into the pan, coating the gammon and pineapple



Chicken with Mediterranean Vegetables
Free on Red
Serves 1
Ingredients:
1 chicken breast
45g mozzarella (healthy extra)
Courgette
Mushroom
Onion
Salt and pepper
Method:
Take one chicken breast and make three diagonal slits with a knife across the top
Then slice 45g mozzarella cheese and place in the diagonal slits in the chicken
Cut a square of kitchen foil big enough to hold the chicken and fold u p to make a parcel, leaving one side open to place Ingredients: into
Then slice the courgettes, mushrooms and onions (feel free to use whatever vegetables you like)(
Place the vegetables in the square of foil and season with salt and pepper
Then position the chicken directly on top of the vegetables and fold over the last edge of your foil to complete the parcel
Out in the over for 30 mins on 180c gas mark 5
The chicken comes out really tender as it cooks in the juices from the vegetables


Garlic Lime Chicken
Free on Red
Serves 4
Ingredients:
4 skinless chicken breasts
½ cup low sodium soy sauce
Fresh lime juice
1 tablespoon Worcestershire sauce
2 cloves garlic, minced
½ teaspoon dry mustard
½ teaspoon coarsely ground pepper
Method:
Rinse chicken with cold water and pat dry with a paper towels
Place in reseal able plastic bag
Mix together soy sauce, lime juice, Worcestershire sauce, garlic and mustard
Pour mixture over chicken in bag. Close bag and shake to coat well
Marinate in refrigerator 30 minutes
Drain chicken; discard leftover marinade
Sprinkle chicken with pepper
Spray non-stick fry pan with low fat cooking spray and heat over medium heat
Add chicken and cook about 6 minutes on each side or until done
Alternatively grill the chicken



Chicken and Bacon Frittata
Free on Red
Serves 1
Ingredients:
Chicken breast (skin removed)
Trimmed Bacon
Spring onions
Fry light
2 or 3 eggs
Fromage frais (1 heaped tbsp per egg)
Seasoning
Low fat cheddar (healthy extra)
Method:
Chop the chicken, placed in a pan and fry with the fry light until cooked through and slightly browned
Chop the spring onions and bacon add to the chicken and continue to stir-fry until the bacon is cooked to your liking
Pour mixture into an ovenproof dish that has been sprayed with fry light. Cover with a cloth and allow to cool a little.
Whisk eggs and fromage frais together then pour over the mixture
Sprinkle with the grated cheese
Bake in a moderate oven for about 30 mins or until set and cheese is golden



Stuffed Chicken Wrapped in Bacon

Serves 4
Ingredients:
4 large chicken breasts, skinless and boneless
8 trimmed rashers of bacon
For the stuffing:
1 red onion
2 tsp lemon juice
2 tsp dried sage
18-g lean pork mince
1 egg yolk
Seasoning
Method:
Firstly make the stuffing:
Chop the onion and mix in the lemon juice
Add to the onion mix the sage and pork mince and mix well
Season and bind with the egg yolk
For each chicken breast:
Using a small sharp knife make a pocket in the chicken breast
Fill with a ¼ of the stuffing, then wrap with 2 rashers of bacon, ensure the rasher ends meet at the bottom of the chicken to secure the stuffing
Bake in a preheated oven at 180 – 200c for about 1 – 1 ½ hours until the chicken is cooked
Transfer to a preheated grill to crisp the bacon



Mushroom Topped Chicken
Free on Red
Serves 2
Ingredients:
2 Chicken Breasts
4 Trimmed bacon rashers
Mushrooms
Method:
Slice the mushrooms thinly
Place sliced mushrooms over the top of the chicken breast
Wrap breast in bacon rashers
Cook in a preheated oven at 180c for approx. 1 hour (until chicken is cooked)



Honeyed Orange Chicken
1 ½ sins on Red
Serves 1
Ingredients:
Skinless chicken breast
1 tbsp runny honey (1 ½ sins)
Juice and zest of one orange
Crushed Garlic
½ tsp of grated Ginger
Method:
Dry fry chicken breast for 8 – 9 minutes until a light brown
Combine the rest of the Ingredients: in a small bowl
Remove chicken and coat in the mixture then transfer to a roasting tin and pour over the rest of the mixture
Cook for a further 12 mins at gas mark 5


Diet Coke Chicken
Serves 1
2 ½ sins
Ingredients:
2 portions of chicken
2 can diet coke
1 sachet bachelors slim a soup minestrone
Let the coke go flat
Add the soup mix to it and stir in
Pour over the chicken and bake on gas mark 7 for 30 – 40 mins or til the liquid has more or less gone


Chicken Casserole
Free on Red
Serves 4
Ingredients:
Chicken pieces
Tin of chopped tomatoes
1 large onion (chopped roughly)
Swede
3 Carrots (diced)
Mushrooms
Chicken Bovril
Garlic
Method:
Dry fry the chicken pieces, with the onion and garlic for a couple of minutes
Add the chopped tomatoes, Swede, carrot and mushrooms and continue to fry for one minute
Add some stock made up from the Chicken Bovril
Place in an over proof dish and cook for approx one hour on 200c


Fried Cabbage
Free on Red
Ingredients:
6 slices of bacon
One medium head of cabbage cut into 1/8’s
One cup of chopped onions
Steam the cabbage until tender but not lump
Fry the bacon until crisp and set aside
Sauté the onions in a pan
Add the cabbage to the sauté onions cover and cook until tender on a medium heat
You may need to add a little water depending on the water content of the cabbage
Sprinkle with crumbled bacon



Barbecued Beef Rib Rub
1/3 cup ground black pepper
¼ cup paprika
1 tbsp salt
1 tbsp chilli powder
1 ½ tsp garlic powder
1 ½ tsp onion powder
General Purpose Dry Rub
¾ cup paprika
¼ cup black pepper
¼ cup salt
2 tbsp chilli powder
2 tbsp garlic powder
2 tbsp onion powder
1 tbsp cayenne pepper
Combine all Ingredients: and mix thoroughly. Rub meat to be barbecued with the dry rub and allow to marinate in the refrigerator overnight


Pork Dry Rub
1 tsp sage
1 tsp salt
1 tsp pepper
½ tsp ground cumin
Combine all Ingredients: and mix well
All Purpose Rub
3 tbsp paprika
1 tbsp onion powder
1 tbsp garlic powder
1 ½ ground basil
1 ½ dry mustard
1 tbsp red pepper
½ tsp black pepper
Combine dry rub Ingredients: and rub onto ribs or meat
Cajun-flavoured Steak Rub
Scrape a halved garlic bulb on both sides and then rub in a half-teaspoon of homemade Cajun mix:
1 tsp dried basil
Tsp thyme
1 tsp cumin
1 tsp black pepper
½ tsp hot red pepper or cayenne


Orange Glazed Chicken
Serves 4
1 ½ sins on red
Ingredients:
4 chicken breasts
4 level tbsp marmalade
2 heaped tsp coriander seeds
3 garlic cloves
1 tsp lemon juice
Method:
Place 4 chicken breasts in a roasting pan
Make several cuts using sharp knife and season to taste
Mix together remaining Ingredients:
Spread mixture over the chicken
Bake for 40 – 45 mins on gas mark 5/190c


Chicken in a Creamy Mushroom Sauce

Ingredients:
Chicken Pieces
Garlic
Onion
Mushrooms
Chicken Bovril
Fromage Frais
Fry light
Spray a saucepan with fry light and fry off the chicken pieces
Remove the chicken from the pan and set aside
Place the garlic and onions in the pan and fry until softened
When softened put the chicken back in and add the mushrooms
Make the Bovril with some water and add to the pan
Braise everything together until the chicken is cooked and the Bovril reduced down
Remove the chicken from the pan again
Remove the pan from the heat and add a 2 – 3 heaped tsp of fromage frais to the mushroom and onion sauce and then pour over the chicken


Baked Cod Steaks with Lime
Free on Red
Serves 4
Ingredients:
4 cod steaks
6 tbsp lime juice
2 level tbsp chopped parsley
4 heaped tbsp chopped onion
¼ level tsp ground ginger
¼ level tsp cayenne pepper
Salt
Slices of lime for garnish
Method:
Place cod in a shallow baking dish
Mix together all other Ingredients: except the slices of lime
Pour over the fish and leave to marinade for at least 2 hours
Pre heat oven to 180c/Gas 4
Bake fish for 20 – 25 mins
Garnish with lime slices
Serve with juices poured over and accompanied by a selection of free vegetables


Free Sausage Patties
Free on Red
Ingredients:
2lbs ground pork
½ tsp ginger
½ nutmeg
½ tsp coriander
1 tsp sage
½ tsp thyme
½ tsp pepper
1 ½ tsp salt
5 – 10 drops hot pepper sauce, if desired
Method:
Mix all the Ingredients: together well, add a little water if necessary
Shape into patties
Spray a pan with a little fry light
Fry until cooked through



Quick Beef Burgers

Ingredients:
1 1/2 lb minced beef
1 medium onion finely chopped
Salt and freshly ground pepper
Method:
Combine all the Ingredients: in a bowl
Divide into 8 equal portions
With well-wetted hands shape the portions into burgers about 6 cm in dia
Grill for about 10 – 12 minutes turning once or alternatively barbecue



Beef Stroganoff
3 sins whole recipe on Red
Ingredients:
½ lb lean fillet or rump steak (in strips)
8 oz mushrooms sliced
2 onions finely chopped
8 tbs very low fat natural yoghurt
2 sprigs of parsley finely chopped
2 tbsp low fat crème fraich
Salt and pepper to taste
Grate nutmeg (optional)
Method:
Place onions in a pan and fry with fry light
Add the mushrooms and cook for 2 – 4 minutes
Add nutmeg and seasoning
Then add strips of beef and cook until brown
Mix together over beef and warm through for a couple of minutes. Do not let mixture boil
Sprinkle remaining garnish


Steak with Creamy Garlic & Mustard Sauce

Serves Red
Ingredients:
1 lean fillet, rump or sirloin
1 clove garlic
2 oz mushrooms diced
1 tsp whole grain mustard
1 tsp dark soy sauce
2 tsp artificial sweetener
1 tbsp dry white wine
3 tbsp fromage frais
Method:
Spray frying pan with fry light and cook steak
Remove from pan and keep warm
Add garlic and mushrooms to the pan and gently cook in the steak juices for about 2 mins
Remove from the heat and add the fromage frais to thicken
Our sauce over the steak



Honey & Mustard Chicken/Pork

Mixture covers 2 steaks/breasts
Ingredients:
Chicken/Pork breast/steak
1 tsp clear honey
1 tsp wholegrain mustard
Thyme
Lemon Juice
Method:
Mix together the honey, mustard and a large pinch of thyme
Part grill the meat
Remove from the grill and baste with the honey mixture
When cooked squeeze lemon juice over


Quick Corned Beef Hash
Serves 1

Ingredients:
280g Jacket Potato (healthy extra)
1 Tin corned beef
½ onion
Fry light
Method:
Bake potato in oven
Soften onions in microwave with fry light
Scoop out potato from the skin and mash
Mix with rest of Ingredients:
Finish in the oven



Chicken Casserole

Serves 2 – 4
Ingredients:
2 pints chicken Bovril stock
1 chicken oxo cube
1 pack diced chicken thighs
2 leeks finely chopped
4 cloves of garlic, whole
1 tbsp soy sauce
4 rashers bacon, diced
1 small Savoy cabbage shredded
Method:
Heat the Bovril
Add the leeks, chicken, bacon, garlic, and soy sauce
Simmer well until the chicken is cooked through
Add in the Savoy cabbage and simmer until soft
Crumble in the oxo cube and simmer again



Chicken and Lemongrass Soup
Free on Red
Serves 4 – 6
Ingredients:
6 whole, skinned, chicken thighs
2 lemongrass stalks
2 Kaffir lime leaves
2 garlic cloves, peeled and halved
1 red chilli, roughly chopped
4cm piece fresh root ginger, thickly sliced
Juice of 1 lime
4 tbsp light soy sauce
1 bunch spring onions, thinly sliced
1 tbsp fresh coriander leaves
Method:
Place chicken thighs in large pan
Bruise the lemongrass with a rolling pin and crumple the lime leaves
Put in the pan with the garlic, chilli, ginger and 1 ½ litres of water
Bring to the boil and simmer for 30 mins until the chicken is cooked through
Strain the stock into a clean pan
Shred the chicken off the bones
Return the chicken meat to the pan with the limejuice, soy sauce and spring onions
Gently heat through
Serve steaming hot scattered with coriander leaves


Sausage Casserole

Ingredients:
1 large onion
2 carrots
1 tsp dried mixed herbs
½ tsp of vecon
2 or 3 sausages per person
500ml carton of passatta
250g mushrooms
Black pepper
Method:
Cook the sausages either fry in fry light or grill
When cooked, cut each one into 3 pieces
Chop the onion and carrots and put into a pan with half a pint of hot water and the vecon
Bring to the boil, and simmer with the lid on for 5 minutes or until the veg is tender
Remove the lid and cook for another 2 minutes to reduce the stock a little
Add the sausages to the veggies and add passatta
Bring to the boil and reduce heat, cover and simmer for about five minutes
Cut the mushrooms into chunky slices and add to the pan
Cook for another 5 – 7 minutes until the mushrooms are cooked


Mustard Gammon

Serves 1
Ingredients:
180g gammon steak, all visible fat removed
1 tbsp mixed peppercorns, crushed
2 tbsp lemon juice
2 tbsp very low fat natural fromage frais
½ tsp Coleman’s English Mustard powder
1 tbsp freshly chopped parsley
Brush gammon with lemon juice and press on crushed peppercorns
Cook under medium grill for about 10 mins until cooked through
Meanwhile blend fromage frais with mustard powder and 1 tbsp water until smooth
Place in a pan with the parsley and heat gently, stirring until warmed through but do not boil
Serve immediately with peppered gammon steak

If you post this in the recipe section I'm sure you'll help alot more, the Site is decided into forums to allow people to navigate it easier and search for things.

Some great ideas but some of the syn values def need adjusting- two that stuck out was the mushroom baskets- bread and brandy def won't be free.
Also the sausage casserole, there isn't any official syn free sausages anymore so this will need some adding to it.
Some really good ideas though, hope this can be moved to recipe sub forum :) x
