I sometimes have sandwiches: bacon and fresh tomato, ham salad...um left over roast dinner from the day before microwaved.
Salmon salad (I love salad!)..to name but a few.
HTH...will have another think!

I usually have chicken and salad too! But today I've had boiled eggs and ham salad :)
It was lovely actually. I forget how much I love boiled eggs!

Hi, do you like crab sticks? I've just had a pack of crab sticks chopped up with rocket and a tablespoon of sweet chilli sauce (2 syns). The flavours are great!
How about a tuna quiche made with cottage cheese and eggs? I have this warm with tinned tomatoes or you could have it cold too.
Home made veg soup maybe?

Yum! Are the quiche recipes on any of the threads? I also find red days a bit harder to plan for

I often take cooked chicken drumsticks, or homemade vegetable soup into work. Or if i'm in a rush, some ryvita's with some cottage cheese, ham & salad - not my favourite lunch, but it's good and makes a change from salads.

You could always do mix to max and have green lunches and red dinners - works for me!
