Restarting v low carb diet

Hi, I'm Restarting low carbing again, this time I've cut out all veg. Exercising 4 times a week and have been testing for ketosis which I have been in everyday apart from today. First week loss of 5lb second week only 1lb this week a whopping gain of 5lb. What's going on...? It's really disheartening . X
