Rustic Fish and Chips! LOVELY!

thought id share a recipe of a meal i cooked tonight, it was beautiful!

600g potatoes
calorie controlled cooking spray
2 slices WW white danish bread
1tbsp fresh parsley, chopped
1 egg,beaten
1 tbsp plain flour
4 x 200g fillets white fish
280g frozen peas
lemon wedges, to serve

method:

1. preheat the oven to gas mark 6/200oc/180oc fan assisted oven. Cut potatoes into thick chips, leaving the skin on, and place in a bowl. Mist with calories controlled spray and toss to coat. place on a baking tray and cook for 40 minutes.

2. lightly toast WW bread then blitz in blender to make crumbs, mix in the fresh parsley. Pour the egg onto a shallow plate and sprinkle the plain flour on another plate.

3. mist another tray with the calories controlled spray. Dip the fish fillets into the flour, then the egg, then the breadcrumbs and parsley to coat both sides. Place on tray and bake for 20 minutes.

4. boil peas for 3-4 minutes.

5. Divide everything between 4 plates and serve with a lemon wedge

this recipe serves 4 people and is only 11 propoints per serving!
its filling and yummy!
