Sausage & pepper wholewheat spaghetti!

Approx 200g wholewheat spaghetti (I used Sainsbury's organic and it was really good!)
1T extra virgin olive oil (6 syns/HEB)
Joe's pork sausage meat, I used just under half a pack (free! Low Fat Sausages)
2 cloves garlic
1 leek, halved lengthways and sliced
1 large red pepper, halved and sliced
Handful of cherry tomatoes, halved
6 brown mushrooms, sliced thickly
1/2 cup chicken stock
1 chilli
1T tomato paste
Basil
Parsley

Boil the pasta according to pkt

Heat the olive oil and brown the sausage meat, breaking it up into little pieces as it browns.

Add the sliced leek, chillies, tomato paste and red pepper and cook until softened. Add the garlic & mushrooms and chicken stock and simmer for about 5 minutes.

Add the fresh herbs and boiled pasta and mix well. Eat!

If you have an HEA available, a sprinkle of parmesan would be amazing with this.
