Lovely bacon, onion, sweet potato, pea mini frittatas Delicious hot or cold with salad or baked beans .1 syn for the lot (makes 15 )
Peel large sweet potato and cut into rounds and roast for about 15 minutes.
When cooled dice them.
In a dry fry pan cook diced lean bacon and onion add handful of frozen peas for last 2 minutes.
Mix content of frying pan to chopped sweet potato and spoon mixture in bottom of silicone muffin cases.
Beat 6 eggs and splash of milk & a tsp baking powder.
Pour into cases and place on baking tray and cook for 20 minute son 180 !! All done
