1 fresh green chilli, deseeded & finely chopped
2 tsp ground ginger
5 garlic cloves, peeled & finely crushed
2 tbsp finely chopped coriander
1 tsp roasted cumin seeds
500g lean minced beef
2 tbsp peeled and very finely chopped red onion
1 tsp mild or medium chilli powder
1 small egg beaten
2 tsp sea salt
- Place all the ingredients (except the Fry Light & Lemon wedges) into a bowl and using your fingers combine thoroughly. Cover & marinate in the fridge overnight to allow the flavours to develop.
- Preheat the oven to 190c/Gas 5 and line a baking sheet with non-stick baking parchment. Divide the mixture into 12 portions and shape each one into a sausage shape about 4ins long around a metal or bamboo skewer.
- Place the kebabs on the prepared baking sheet and lightly spray with Fry Light. Bake for 15-20 minutes, turning once halfway through cooking. Remove from the oven & serve immediately with the lemon wedges to squeeze over.
