300g toms onthe vine, vine removed & halved
2 garlic cloves unpeeled left whole
300g plums halved & stoned
Cooking spray
500ml veg stock
50g low fat soft cheese
A lrge handful fresh basil leaves shredded
Salt & pepper
1. Preheat oven gas 6/200c. Put toms,garlic, & plums in roasting tray & spray. Toss & cook for 30 min till soft
2. Squeeze flesh from garlic & put all contents in pan scrapin any caramelised bits from tray & pour in stock.
3. Add soft cheese & blend till smooth. Warm thru till hot, season to taste & stir thru basil just before servin x
