Soba noodles?

Going to do a recipe tomorrow that uses soba or medioum egg noodles.
When I looked at the soba noodles yesterday, they were either 40% or 100% soba, what is soba, and what do they taste like?
Or am I better off sticking to the egg noodles?
 
Yes, think I will, particularly as I am almost sure that they were also labelled organic, although might be wrong there.

I think they are a bit browner tasting than regular noodles, but not as much as brown rice vs normal rice

Personally I think they go well in clean fresh tasting oriental soups rather than with saucy stirfries - also depends on the thickness of them
