Spinach

I'm making the smoked haddock gratin out of the SW mag for tea. The recipe said baby spinach, but Tesco only had massive bags of normal spinach. I've never had spinach before, so, being so tight :D as I am, didn't want to get the huge bag, but instead I bought some canned spinach. Will this work? If so, I presume its raw and I just treat it like fresh?

It will be fine, you just won't need to wilt it, just warm it through.
I use frozen spinach (as there's only me who likes it!) and just drop it into boiling water for a few mins then stir through whatever I am having.
 
Although the bag of spinach looked huge it actually reduces a lot in size when you wilt it. I use about half a bag of baby spinach when I'm doing spinach and ricotta pasta and that's just for one person.
 
I use tinned spinach quite often.

A warning though, empty the canned spinach into a seive or colonder and let it drain for a good hour before you use it, there is a lot of hidden water in canned spinach.....
