I'm always genuinely mystified by the 2 tbsp of veg thing.
I mean, you could balance a whole cucumber on a spoon, couldn't you?
Out of interest, how many sprigs of cauliflower/broccoli do we reckon equals two spoonfuls of veg? Four? Six (if they were small sprigs, LOL). Or, if we're talking level spoonfuls, is that way too much?
