Substitutes for fromage frais and quark in the USA

How about Neufchâtel (low fat cream cheese) for fromage frais? That's readily available in U.S. supermarkets.
For quark, you could contact the New York State Farmstead and Artisan Cheese Makers Guild - some of their members may produce this. I don't know if they ship their products, though.

hi there if you can find a cream cheese made from skimmed milk this is the equivalent of quark 
... and Sal morrisons do a strawberry biopot that is syn free (not sure if you're in the uk or not) If not try to aim for the very or no fat yoghurts with the natural flavours and if you are in the uk a lot of lowfat yughurts are only 1/2 syn each
