Orange soup...uses leftovers from big sunday roast.

Butternut squash
Sweet potato
Carrot
Swede
Onion
Garlic

plus optional:

cherry tomatoes
mushrooms
peppers
courgette

Or whatever you have...

Firstly - roast all above with a couple of spritzes of frylight and eat for lunch. :p

Then, blitz in blender with veggie stock until smooth.

We freeze in portion sizes (500ml coke bottle filled to top of label is good) and have for lunches at work - extra bonus that it's almost defrosted between leaving the house and lunchtime...

We made about 10 portions of this today, and used about 3l of stock...
