Firstly - roast all above with a couple of spritzes of frylight and eat for lunch.
Then, blitz in blender with veggie stock until smooth.
We freeze in portion sizes (500ml coke bottle filled to top of label is good) and have for lunches at work - extra bonus that it's almost defrosted between leaving the house and lunchtime...
We made about 10 portions of this today, and used about 3l of stock...
