Ingredients
8 low fat sausages
100g plain flour
2 eggs, beaten
150ml semi-skimmed milk

Instructions
1. Preheat the oven to 200c, 400f, Gas Mark 6. Put a baking tray in the oven to heat.
2. Make the Yorkshire pudding batter by whisking the flour, eggs and a little milk to a thick paste, add the remaining milk and whisk to a creamy batter. Allow to stand for 30 minutes.
3. Dry fry the sausages until lightly browned. Take the hot tray out of the oven, spray with oil and lay in the sausages. Pour the batter around the sausages and place in the oven for 25-30 minutes. Do not open the oven before time as this will make the batter collapse before it is fully cooked and set.
4. When cooked, remove from the oven, cut into portions and serve hot with a selection of seasonal vegetables and onion gravy.
