454g (or 1 lb) extra lean minced turkey
1 small onion, grated
3 small courgettes, grated
1 teaspoon soy sauce
1 level teaspoon grated fresh ginger
1 egg yolk
salt and pepper
Mix all the ingredients together in a bowl until well combined. Divide the mixture into four and shape into burgers with your hands. If you have time, chill for a while.
Either grill or fry in Frylight - gently, so they don't break up.
These are free on red and EE, but you must make sure that the turkey mince is extra-lean. This means less than 5% fat. Some turkey mince is surprisingly high in fat so you must read the label.
I find that the grated courgette keeps the burgers nice and moist, and of course the courgette and onion are superfree!
