A few weeks ago in an attempt to try some new recipes I made a polenta 'cake' with vegetables and chilli (it was from a slimming world cook book so I won't get into the is or isn't polenta free debate, the book said free!). I enjoyed the baked polenta with salad and a little low fat feta. Hubby was not so impressed and said it was more of a side dish than a main event (I find very few red/green slimming world meals feel like a whole meal and I don't lose on extra easy!) so......any other stumming polenta recipes or idea of what to put with the polenta bake thing on a green day?
