What to serve with stuffed peppers?

    Am planning to make stuffed peppers for tea this evening and am wondering what to serve them with to make it a little more satisfying...any ideas ....am on a green day :)

    How about some other roasted veg - put chopped onion, courgette, mushrooms whatever you fancy really, in a big roasting tin and cover with fry light and whatever spices you want. Roast for around 20 - 30 mins.
    Or you could have cous cous which is dead easy, only takes 5 mins. Or a bachelors pasta n sauce.
    I'm getting hungry just thinking about it!

    What are you stuffing them with? Depending what's in them if it's filling (I normally stuff with risotto) and how many you have then a simple salad would do. Some spicy wedges would be nice too. Yes, I'm the queen of gourmet food.:p

    I was going to ask what you were stuffing them with too :)

    I tend to do a salad & maybe some Roasted pots or something, maybe what you are stuffing them with could be mixed through the salad if there is any left over??

    Am stuffing them with couscous onion and tomato and maybe some courgette like the iddea of the roasted veg and the wedges yum yum never made the wedges though so hope they would work for me!

    Wedges are so easy to make!

    I usually put my potatoes in the microwave for 10 mins or so, then chop it into chunky wedges, sprinkle with herbs/spices, spray oven tray with frylight, then again spray the potatoes, add a bit of salt, then cook on 200 for 20/30 mins - yummy yumm!!!!!!!!!!!!

    Made the wedges for the first time and ahd with the peppers...yum yum yum!!!
