SW has mixed opinions on saving your syns up for one/a few days - some people can manage it and still have a weight loss, and others find that they really need to stay below 15 each day... it's really a matter of trial and error for you individually! No guaranteed loss by saving up syns or having syn-free days following a big night out!

Alternatively, you can have a Flexi-syn day - have a think about what you like, set a limit on what you'll have (a number of syns, but can be higher than 15) and stick to that plan. Then start back on the plan asap - no guaranteed weight loss, but it's the best you can do!
