Xanthan gum

Hi there :)
I read somewhere that Xanthan Gum can be used to thicken sauces and gravies but can anyone tell me if it's syn free please?x
 
It's syn free as it's a stabiliser. It doesn't have many other properties.

You will see this in many "diet" products that are lower in fat than the original product. Like light mayo or other creamy sauces.

Have used it to thicken some fish stock and it's quite successful.
Only need small quantities though. :)
 
I am coeliac and use it in cakes to increase the starchiness of gluten free flour, I didn't know there was a thickening quality to it. I don't bake cakes any more so haven't used mine for ages, I wonder if it goes off.
