Just thought I'd share a recipe for a potato salad I've made for this evening's meal...
500g new potatoes eg jersey royals or similar
3 eggs, hard boiled
3 salad/spring onions
2-3 rashers lean bacon
4 level tbsp extra light mayonnaise (2 syns)
Boil the potatoes (20 mins) and eggs (10mins).
When the eggs are cool, peel them and chop into quarters.
Chop the bacon rashers into small bits and fry until crispy.
Chop the salad onions into small rings and any larger potatoes into halves.
When the bacon and potatoes are cool, mix all the ingredients together with the light mayo and add some black pepper to taste.
2 Syns for the whole thing on extra easy...either eat it all to yourself
or, as I do, eat half for dinner (1 syn a serving) and save the other half for lunch the next day.
Good served with cold cuts of meat and a big green salad or with bbq meats and veg.
