Invested in a stick blender. Β£5.99 from Argos and seems to work well.
Have made spicy butternut squash and sweet potato soup today.
These amounts made 2 good servings.
500 ml stock ( I used chicken, but veg will work fine)
Half butternut squash, peeled, deseeded and cubed
1 good sized sweet potato peeled and cubed
Handful frozen diced white onion
Pinch chilli flakes
Garlic granules
Salt
Parsley
Frylight
Gently fry the onion, squash and sweet potato for a few minutes
Add the boiling stock and continue simmering until veg is soft
Remove from heat, add seasoning to your taste and zap with the stick blender ( or food processor)
Sprinkle parsley to serve x
I think I'll use a little less chilli flakes next time
