Apple and celery coleslaw 130 calories per serving

    Serves 4

    Prep time 10 mins

    2 tablespoons of lemon juice
    1 red apple skin left on and chopped
    300g white cabbage shredded
    100g red cabbage shredded
    1 large carrot grated
    4 spring onions sliced finely
    3 celery sticks finely sliced
    50g sultanas or raisins
    100g seedless grapes halved
    300ml low fat plain yogurt (if you can find some low fat pear yogurt, it works wonders as a dressing)
    salt and pepper to taste

    Put the lemon juice and the apple in a large bowl and toss to coat the apple.
    Add the rest of the ingredients and mix well. Season to taste.
