My hubby and I love aubergines and that is the only thing none of my kids will eat.
Last weekend I made stuffed aubergine and it was really yummy.
I halved the aubergine, took out the "meat", and diced it. I chopped up some mushrooms and tomato, fried them all with garlic in fry light. I mixed these with cous cous and stuffed the lot back into the shells, topped by grated cheddar. Put them into the oven until the cheese melted and browned.
Free, with 1 HEXa for the cheese. Really yum and filling too.
