Bacon and Cheese Tortilla Espanola

1 HEa per serving

2 large baking potatoes, peeled and thinly sliced
6 eggs
Spray Oil
1 onion, chopped
6 slices of lean cooked bacon. (I used turkey rashers)
112g of reduced fat cheddar (4xHEa's)
frylight or pam spray


Preheat the oven to 180c to 350f

Blanche the potatoes in some boiling hot water for a few minutes

Whisk together the eggs, salt and pepper.

Spray a frying pan with frylight or pam spray over a medium high heat. Add the onion and potatoes: cook turning frequently, until the potatoes are golden.

layer the potatoes, onion and cooked bacon in a round oven proof dish.

pour over the whisked eggs, top with the cheese and bake in the oven till set and golden on top.

serve with a side salad.
