Beetroot

What do you do with beetroot?

If I buy it cooked I grate 1 with a carrot and some onion and add a teaspoon of balsamic or red wine vinegar

if I buy it raw I tend to roast it with orange juice and or balsamic vinegar

pre-SW I even tried Hugh F-W's beetroot brownies (prefer normal brownies TBH)

does anyone have any other ideas for beets?

i am not that adventurous i have it in a salad with couscous, and salad veg or with a jacket and cottage cheese

You can make a beautiful pink soup with it - served chilled generally I think. I also just love cooled cooked beetroot chopped up in a salad.

I love it with baked potatoes and salads...also nice with chips too.

I love Beetroot and apple salad. I buy the chilled, cooked ones, chop them into cubes, cube an apple too and mix with either Ex light Mayo (and syn the mayo) or if i have made syn free Mayo i mix it with that. Lovely with a jacket spud or cold meats.

Syn free mayo

6oz very low fat fromage frais
2 tbsp cider vinegar or white wine vinegar
1 tbsp lemon juice
2 tsp canderal
Mustard powder blended with a little water
Salt and black pepper

Mix all ingredients until smooth

Store in fridge for up to 5 days
