Blanching kale until slightly wilted ...

lol, it means to put in boiling water for 2odd mins then take out and put into cold water to preserve the colour and bite to the kale. But... I love my veg to still have crunch I cant stand soft squiggy veg, lol, but with the kale I found I need to cook it like cabbage I think it was about 8 mins because to blanch it meant it was too hard to chew and get down, HTH.
 
You sometimes blanch vegetables before going on to cook them in some other way. With something like kale it removes some of the bitterness.
 
Blanching is the cookery term. It's used when freezing veg too. You blanch them for a few minutes (i.e. drop them in boiling water) then plunge into cold water. What this does is stop the growing process (by boiling) and then the cold water stops them cooking any further so they're still "fresh" when they're frozen. They keep better that way.
