Puddings Bread and Butter Pudding

Well actually, bread pudding, no butter used! I experimented the other evening and came up with this little concoction...

(It was yummy, maybe a little 'eggy' and next time I make it, I may just use half an egg and a little extra milk. Let me know what you think...)

Cut a slice of WW bread (1/2 HEXB) into quarters.
Lay 2 quarters in a dessert bowl.
Sprinkle on 7g raisins (1 syn)
In a seperate bowl, beat an egg, add a little milk from your HEXA.
Add a couple of drops of vanilla extract to the egg mixture, a sprinkling of cinnamon and some sweetener and mix.
Pour the egg mixture over the bread and leave to absorb.
Cook in the microwave until set.


You could adapt this as you wish, e.g. use some sow-syn spread, or add a little marmalade, etc. I made a non-SW version for hubby, with 'normal' bread and plenty of butter.
 
This is lovely with chocolate spread on it.
 
I've never tried, but I'm sure it would be fine. Probably nicer, because the top could go all crispy - yum... Let us know how you get on!
 
Try fat free creme fraiche and add sweetener and a drop of vanilla extract or just buy a vanilla flavour müller yogurt and pretend it's cream ;)
 
This is very similar to mine :-

QUICK BREAD PUDDING ( 1 HEXB, some HEXA & 0 SYNS)

To make 2 ramekins (and you can eat both :) ) or 1 bowlful

INGREDIENTS
2 slices wholemeal bread from a 400g loaf
Cinnamon
Splenda
FryLight
1 tsp Vanilla Essence
60ml SS milk
60ml water
( add 14g sultanas for 2 syns)

Chop the bread into cubes and place in a small bowl

Sprinkle cinnamon lightly over the top to colour

Sprinkle sweetener over the top lightly

Spray with frylight

In a jug measure up 60ml SS Milk and 60ml Water and add 1 tsp vanilla and stir.

Pour slowly over the bread mixture

Microwave for 4 mins

Spoon into ramekins and eat both!!!


For the kids I mixed in one of those lunchbox sultana and apple boxes and used brown sugar

4 SYNS & 1 HEB some HEA

Have just adapted my Bread Pudding Recipe and it was GORGEOUS!!

To make 1 bowlful for 1 person

INGREDIENTS
1 HEB Bread (I use 3 slices Weightwatchers Brown Danish)
Cinnamon
Splenda
FryLight
1 tsp Vanilla Essence
60ml SS milk
60ml water
15g Cadburys Flake

Chop the bread into cubes and place in a small bowl

Flake in the chocolate and mix

Sprinkle cinnamon lightly over the top to colour

Sprinkle sweetener over the top lightly

Spray with frylight

In a jug measure up 60ml SS Milk and 60ml Water and add 1 tsp vanilla and stir.

Pour slowly over the bread mixture

Microwave for 4 mins

Careful- bowl will be HOT

I had mine with a dollop of Greek 0% Yog
