Butternut Squash (Can I !)

Im doin miself some roast veg later to go with my syn free curry,
I have a butternut squash in the fridge which i want to mix with my sweet potato for a fish pie topping.
Can i roast this squash aswel, do i just peel it deseed it, cut into cubes and roast along with the others?

Yes, you can roast it, like you said.
I tend to spray with a little fry light and top with a little chilli powder. Yum.

yep, and its lovely.
i've never tried it but am told if you roast them whole in their skins they are much easier to peel and chop, but i never want to use the whole thing at once!!

ummm looks like ive found miself another veg, it was scrummy.
Hope its as nice mashed as a topping for mi fish pie

Butternut squash is ACE!! I love it roasted... makes great soups too. I have them growing in my backgarden!
