Calling all jam and jelly makers

What do you find the best method for removing the scum from the top whilst it's boiling, or do you not bother?

I use a soup fat skimmer but the holes are big and it's hard work getting it all. I've looked for a jam making skimmer but can't find one.

I'm making some blackcurrant jelly just now and there's loads of scum. What on earth is it??

This is what Delia has to say................

Don't worry about any scum that rises to the surface while the jam is boiling – if you keep skimming it off, you’ll finish with no jam at all! Instead, wait until you have a set, then remove the jam from the heat and stir in a small lump of butter, which will disperse the scum.

Hope I am not to late to help Jay.................

Oooh, thanks Sue!
No, not too late - I'm just make jelly with last year's blackcurrants - I'll have a ton of soft fruit soon to make even more with!

Delia is right, you do keep skimming and skimming and skimming!! I'll try with the butter for the next batch.
