Can I make a sauce for steak with quark?

yep you can.

Take your quark out of the fridge in advance though, because if you add it straight from the fridge it will be too cold and the heat from the pan will likely cause it to split.

Just put the amount you will need into a bowl and set aside, while you prepare your steak etc.

What I do is cook some onions and mushrooms in some Pam spray (similar to frylight) with a crushed clove of garlic. Add a little bit of chicken stock at a time to prevent from sticking (you dont need much at all), until mushrooms are nice and golden, then stir in about 2 teaspoons of Dijon mustard (you will need to syn it) and then turn heat right down, add a couple of spoons of quark and stir, season with salt and black pepper if needed and add it to the top of your steak.

Lush!!

I often do this with a roasted jacket potato too.
