Why not grill some chicken thighs, but them in a pot, make up some chicken stock add mushrooms, onion and carrots and put in the oven to all cook down, add some gravy granules if you want it thicker and season well.

I have a large casserole dish to which I put in my cubed meat and pretty much any veg I have. I then pour a carton of passata over and add a rich beef stock pot and pour water in to the top. Sometimes I add herbs but not always. I cook this on a low heat in the oven for a good 6 hours or so and stir occasionally and add more water if needed.
