Why not grill some chicken thighs, but them in a pot, make up some chicken stock add mushrooms, onion and carrots and put in the oven to all cook down, add some gravy granules if you want it thicker and season well.

My mum does this recipe and it is amaazzzing lol x
I just bung aload of veg in, usually what ever needs using up in the fridge!!

Chicken, Onions, garlic, carrots, mushrooms, courgettes etc then tinned chopped tomatoes, a few shakes of mixed or italian herbs & a tsp of chicken bovril - no complaints in my house.

I have a large casserole dish to which I put in my cubed meat and pretty much any veg I have. I then pour a carton of passata over and add a rich beef stock pot and pour water in to the top. Sometimes I add herbs but not always. I cook this on a low heat in the oven for a good 6 hours or so and stir occasionally and add more water if needed.
