Slow but sure....
Cauliflower & Horseradish Soup

Fry light for spraying
1 onion, chopped
568ml/1pt stock made with Bovril or Oxo
½ head medium cauliflower, chopped
1 level teasp horseradish sauce
salt & pepper black pepper
4 tsp freshly chopped parsley

Spray a non-stick saucepan with Fry Light.

Brown the onion, add the stock and cauliflower and simmer for 30-40 minutes.

Transfer the soup into a blender and puree.

Return to the saucepan and heat through stirring in the horseradish and seasoning to taste.

Pour into bowls and sprinkle with the chopped parsley before serving.

This brings back memories of cauliflower soup with stilton cheese............. loved it although I never actually made it!

Think I will try this today. I don't have any horseradish so am going to tweek your recipe a bit and put some Laughing Cow Deli Light Blue Cheese through it and see if I can replicate the real thing!

I made this once before. Loved it - but it had adverse side effects that my boyfriend was NOT keen on. Lol.
Might make it again at the weekend if he gets on my nerves.
