Cauliflower & Broccoli cheese

I adapted this a little from a cauliflower cheese recipe from an SW cook book.

I large head cauli and 1 head broccoli, cooked until just tender

Whisk up 2 eggs, add 250g fat free natural yoghurt (half a big pot), salt and pepper, fresh parsley, a tsp of wholegrain mustard (optional) and 56g grated mature cheddar.

Put the cauli and/or broccoli in an ovenproof dish, sprinkle over some chopped spring onions and pour over the sauce.

Bake at 220 deg for 20 mins until golden and bubbling.

It's so yummy - this serves two with the cheese as a HEX choice.
