CD 1000 recipes

    So I have decided to start CD1000 plan and am trying to come up with some recipes.

    If anyone can add to the list feel free. I'm a bit of a boring cook so some fresh ideas from other people will be good!!

    CD 1000 - Chicken Stir fry

    Shred/ finely slice 3 tbsps of spring greens and courgettes.
    Slice very thinly 150g chicken breast (all fat removed)
    Boil some water and add 40g noodles
    Fry chicken in a very hot pan, keep the chicken moveing around the pan to stop it sticking. Add the spring greens and courgettes once the chicken has cooked through. Keep everything moving and cook for a further 4 minutes.
    Take off the heat.
    Drain the noodles and serve with the chicken.

    A small amount of chicken and mushrrom soup can be made up into a sauce makes it really tasty - just deduct this from daily allowance.

    CD 1000 Cheesy Baked potato

    Cook a 150g potato in the oven or microwave until soft.
    Cut potato in half and scoop out the middle. Mix the potato with 250g cottage cheese.
    Put the mixture back into the skins and place under the grill for a few minutes until crispy on top.

    Cut up some cucumber and celery until you have 3 tbsp.
    Serve as a side salad

    Penne pasta with tomatoes, olives and chick peas.

    60g dry weight penne pasta (preferably wholemeal)
    225g chopped tomatoes
    half a small onion, finely chopped
    1 clove garlic crushed
    25g drained pitted olives
    100g canned chick peas, drained.
    Half teaspoon mixed dried herbs
    80g green beans trimmed cut into thirds

    1. cook the pasta according to instructions
    2. put tomatoes, onion, garlic, chick peas, olives and herbs into a pan and bring to the boil. reduce heat and simmer for 10 minutes
    3. In the last 5 mins of cooking time add the grean beans to the pasta.
    4. drain the pasta and beans and serve with the sauce.
