Charliemm's Extra Easy Food Diary

Its a habit rather than an addiction, you should be able to crack it especially if you treat yourself each week! You'll find your running will improve as well!

Can't say Im excited to go back to work, as I dont really enjoy the job anymore, too much beaurocracy! But I do love looking after people tho & getting hands on, not the paperwork. I'll give you an example.....last year I turned up to work in a private Nursing Home for patients with Alzheimers & got showed around by an Auxillary nurse & started helping her with the patients, toileting etc. Started chatting to some of the other Auxillarys & they thought I was one as well coz I was hands on. They couldn't believe I was a Registered Nurse as I wasn't sat at the desk doing 'paperwork'! I purposefully tried to stay on the 'floor' to avoid the unnecessary paperwork & really enjoyed my time there looking after those delightful patients. I've had quite a few phone calls from them to go back & would love to once Im fit!
Im sure its like that wherever you go, but doesn't mean we have to like it! xx

Hello! I tried to keep my food diaries consisted, so there should be a lot of them on the thread! I'm not sure if I'll be as good at uploading them this time around though!

Good luck!

I had a read through earlier and promptly went to find the recipe for chicken and spinach curry! :p
I'm also into carbs and curries and need a little choccie fix every now and again so it's good to know you were still eating a good amount all the way down to target! Great inspiration!

Hi Charlie

Welcome back Huni
Looks like you've got your mojo back :)

Food looks great !!
What's your recipe for one egg my girls love pancakes but they not worth the syns
Take care x

Thank you!

It's just an egg whisked until really frothy with some vanilla essence and a little sweetener and then poured into a pan that has been heated with some frylight. Cook it like an ordinary pancake, but it will be a little more fragile and airy. They are syn free so if I have the time I usually use a couple of eggs and make a few more!

Is it a bit like an omelette ??

I guess so, but the vanilla and sweetener take away the savoury eggy taste, so it is sweet.

Of course, though there's not really a recipe!

You'll need:
Eggs
Vanilla essence
Sweetener

Whisk the eggs with a couple of drops of essence and a little sweetener until the mixture is really frothy. A good indication is when it gets quite stiff and you can make 'peaks' in it.
Spray a pan with fry light and spoon on the mixture. Treat it just like a pancake but with a little more care as it will be lighter and airier.
If its still a little omlette-y, spoon a little more sweetener on the top when you serve. Enjoy!

Ooooh thanks. Will def try those soon. Are the porridge pancakes pretty much he same ? X
