Cheesy Leek & Garlic Pasta

200g uncooked tri-colour pasta shapes
1 vegetable stock cube
2 small leeks, finely sliced
2 garlic cloves, crushed
120g extra light soft cheese
50g low-fat mature cheddar cheese

1. Preheat the oven to 200c, 400f, Gas Mark 6. Cook the pasta in a large saucepan of boiling water with the stock cube. Just before you drain the pasta, add the sliced leeks for 1 minute.
2. Drain the pasta and leeks together, then return them to the saucepan and add the crushed garlic and soft cheese, mixing well. Transfer to an ovenproof dish and top with the cheese.
3. Bake in the oven for 10 minutes until golden brown and serve with a mixed salad.
