Red Day Chicken Vegetable Soup

My neighbour made this for me and it was divine!!! Of course you can omit the oil and butter if you want to be virtuous! Not sure how long it would take not using a pressure cooker - prob 20-25 mins or until chicken and veg are cooked.

So simple and yet so delicious!

Chicken and Vegetable Soup

4 boneless chicken thighs cut into largish chunks
3 medium carrots peeled and cut into chunks
2 sticks of celery cut into pieces
1 medium onion sliced
half tin of tomatoes
2 tsp. of chicken bovril
about 1" piece of fresh ginger cut into thin slices
1 clove of garlic smashed
salt and pepper to taste
butter and oil mixed (about 1 tsp. of each)(4 syns)


Heat butter and oil together. Add onions, when translucent, add the carrots, celery and stir for 3-4 minutes. Add the ginger and garlic. Add the chicken, stir around for a couple of minutes, add the tomatoes, with the juice, the chicken bovril dissolved in boiling water (I added maybe a pint and a half), salt and pepper. I cooked the whole thing in the pressure cooker for about 6 minutes. Add some chopped fresh herbs (eg mint, coriander) if liked.
